Chicken in a bag

Method

  • Preheat oven to 180°C fan forced (200°C normal).
  • Share the potatoes between 4 large pieces of baking paper. Place the sliced tomatoes on top, scatter with the olives and season. Then top with the chicken, season and drizzle with oil. 
  • Fold the paper underneath and place on a large baking sheet, with the chicken on the top and the joins underneath. Cook in the oven for about 30 mins until the chicken is firm when pressed.
  • Serve with your favourite potato dish.

  • 4 large potatoes, very finely sliced
  • 3-4 ripe red tomatoes, cored & sliced
  • ¼ cup tiny black olives
  • freshly ground salt & pepper
  • 4 skinless chicken breasts
  • olive oil
