Banana pancakes, American style


  • Combine the self-raising flour, baking powder, cinnamon and sugar in a large bowl. Make a well in the centre and mix in the egg and milk, little by little, to form a batter.
  • Then add the bananas and mix well. 
  • Heat a thin layer of oil in a large non-stick pan. Then drop in spoonfuls of the batter and cook until golden, turning when bubbles pop.
  • To serve, stack pancakes on individual plates, sprinkle with maple syrup and spoon a dollop of yoghurt or ice cream on top.


  • 2/3 cup self-raising flour
  • 1 tspn baking powder
  • 1 tspn ground cinnamon
  • 3 tbsp sugar
  • 1 large egg
  • 100 ml milk
  • 2 fairly ripe bananas, peeled & sliced
  • vegetable oil
  • maple syrup
  • plain yoghurt or ice cream
