Caramelised onion & goat's cheese tart


  • Heat the oil in a large heavy-bottomed pan and gently saute the onions with the balsamic and seasonings for about 30 mins until tender and glazed (and fairly dry), mixing and scraping the bottom of the pan now and again.
  • When ready, preheat oven to 200°C fan forced (220°C normal). 
  • Then lay a pastry sheet in the centre of a lightly oiled oven tray. Spread the onion on top, leaving an edge all around, and top with goat's cheese.
  • Whisk the egg and milk and paint the pastry edges with egg wash. Then cook in the oven for 10-12 mins until puffed and golden. Sprinkle with parsley before serving.

  • sea salt & freshly ground pepper

  • 1 large puff pastry sheet
  • fresh round goat's cheese, sliced
  • 1 egg
  • ¼ cup milk
  • chopped Italian (flat leaf) parsley
