A warm chicken sandwich

Method

  • Batten out the chicken to an even thickness. Then season and gently saute in a little hot oil, squeezing with lemon juice as you do so. Remove and slice.
  • While the chicken is cooking, combine the mayonnaise, sour cream, mustard and a squeeze of lemon juice.
  • Cut the baguette in 4 crossways and then in half again lengthways.
  • Generously spread the bread with the mayo. Then layer with the chicken, tomato and lettuce and press the top on.

  • 2 skinless chicken breasts
  • sea salt & freshly ground pepper
  • olive oil
  • juice of 2 lemons
  • 2 heaped tbsp mayonnaise
  • 1 tbsp sour cream
  • 1 tspn Dijon mustard
  • 1 large baguette
  • 2 ripe tomatoes, sliced
  • iceberg (or cos) lettuce leaves
