Roasted kipflers with smoked salmon & salmon caviar

Method

  • Preheat oven to 200°C fan forced (220°C normal).
  • Lay the potatoes in a large heavy-bottomed oven tray. Then sprinkle with salt, spray with oil and cook in the oven until tender, turning now and again. 
  • When ready, place the potatoes on a serving dish and top with smoked salmon, a dollop of sour cream, a little salmon caviar, and a sprinkling of chives.
  • Serve as an entree or as a side dish with your favourite simple meat or fish dish.

  • 6 kipfler potatoes, scrubbed well & halved lengthways
  • sea salt flakes
  • olive oil spray
  • smoked salmon, cut into strips & rolled up
  • sour cream
  • salmon caviar
  • snipped chives
