Guey Teow Phad See-Euw (Fried large noodles with black soya sauce)


  • Heat 3 tbsp oil in a wok (or large non-stick heavy-bottomed pan) and briefly stirfry the garlic and pork. Then add the kale and toss for a few minutes. Add 2 tbsp fresh oil with the oyster sauce, pepper, sugar and Maggi seasoning. Toss well, add the eggs and briefly cook.
  • Add the noodles and black soya sauce to the wok. Briefly toss and serve with condiments on the side (ie. chilli powder, sugar, sliced fresh chilli in rice wine vinegar, and Asian fish sauce.)

  • 200 gm kale (or Chinese broccoli), sliced in lengths
  • 3 tbsp oyster sauce 
  • 1 tspn white pepper
  • 3 tbsp sugar
  • 3 tbsp Maggi seasoning
  • 4 eggs
  • 400 gm large white noodles, blanched & drained well
  • 2 tbsp black soya sauce
