A breakfast treat
Method
- Preheat overhead grill to the highest degree.
- Toast one side of each slice of bread and then turn over. Spread with mustard and top with the tomato, ham and grated cheese.
- Then grill until the cheese is golden brown.
- At the same time, heat water in a large non-stick pan and add a little vinegar. Then swirl with a spoonand poach the eggs until just set.
- To serve, place a piece of toast on individual plates and top with an egg and a sprinkling of parsley.
Ingredients
- 4 thick slices sourdough bread
- grainy mustard
- 8 slices ripe tomato
- 4 slices leg ham
- grated gruyere cheese
- white wine vinegar
- 4 eggs
- 2 tbsp chopped fresh parsley
