A breakfast treat


  • Preheat overhead grill to the highest degree.
  • Toast one side of each slice of bread and then turn over. Spread with mustard and top with the tomato, ham and grated cheese.
  • Then grill until the cheese is golden brown.
  • At the same time, heat water in a large non-stick pan and add a little vinegar. Then swirl with a spoonand poach the eggs until just set.
  • To serve, place a piece of toast on individual plates and top with an egg and a sprinkling of parsley.


  • 4 thick slices sourdough bread
  • grainy mustard
  • 8 slices ripe tomato
  • 4 slices leg ham
  • grated gruyere cheese
  • white wine vinegar
  • 4 eggs
  • 2 tbsp chopped fresh parsley
