Spicy cured salmon


  • Mix the chilli, sugar and lime juice with 2 tbsp oil, 2 splashes fish sauce, the vinegar and coriander in a large bowl. Taste for seasoning.
  • When ready to serve, dip the salmon in the marinade, piece by piece, and arrange in a round on a large plate (or individual plates).
  • Dress the tatsoi with a little oil and fish sauce. Then place in the centre of the salmon.


  • 1 small red chilli, seeded & finely sliced
  • ½ tspn shaved palm (or soft brown) sugar
  • 1-1½ tbsp fresh lime juice
  • olive oil
  • Asian fish sauce
  • 2 splashes white vinegar
  • 1 heaped tbsp chopped fresh coriander
  • 15-20 thin slices fresh salmon
  • tatsoi leaves
