Fruit & muesli crunch

Method

  • Cut a cross in the top of the peach and plunge in boiling water for 10-15 secs. Then remove and, when cool enough to handle, peel and chop. 
  • Place the yoghurt, ½ banana, the honey, peach, lime zest and juice in a blender and whiz up.
  • To serve, layer the yoghurt mixture, muesli and fresh fruit in a serving glass, finishing with a generous amount of the yoghurt and a garnish of lime zest.

  • 1 fresh large peach
  • 3 heaped tbsp low-fat natural yoghurt
  • 1 banana, peeled
  • 1 tbsp honey
  • juice & grated rind of ½ lime
  • 1 kiwi fruit, peeled & sliced
  • ½ punnet raspberries
  • 4 strawberries, sliced
  • pulp of 1 passionfruit
  • toasted muesli
