Souffled potatoes


  • Preheat oven to 180°C fan forced (200°C normal).
  • Boil the potatoes until tender in lighlty salted boiling water. Then drain well and mash with the butter and seasonings. Add the egg yolks with 125 gm grated cheese and the bacon. Mix well and set aside.
  • In another bowl, beat the egg whites until stiff peaks form. Then gently fold into the mashed potato and put in a lightly greased gratin dish. Sprinkle more cheese on top and cook in the oven for about 30-35 mins until golden and risen.
  • Serve as an accompaniment to your favourite simple meat or fish dish.
