Zucchini, Cheese & Chive Muffins

Method

Preheat oven to 180°C. Sift flour and sugar into a large bowl. Add zucchini, cheese, capsicum and chives. Mix well, make a well in the centre and add eggs. Then add buttermilk and oil. Mix to just combine and evenly spoon into a lightly oiled muffin tray. Cook in the top part of the oven for about 20 mins. Then allow to cool a little on a wire rack. Serve warm with butter on the side.
