Zucchini, cheese & chive muffins

Method

  • Preheat oven to 180°C fan forced (200°C normal).
  • Sift the flour and sugar into a large bowl. Then add the zucchini, cheese, capsicum and chives. Mix well, make a well in the centre and add the eggs, buttermilk and oil. Mix to just combine and evenly spoon into a lightly oiled muffin tray.
  • Cook the muffins in the top part of the oven for about 20 mins. Then allow to cool a little on a wire rack.
  • Serve warm with butter on the side.

  • 2 cups self-raising flour
  • 1 tbsp sugar
  • 1½ firmly packed cups coarsely grated zucchini
  • 125 gm grated tasty cheese
  • ¼-½ red capsicum, cored, seeds removed & finely diced
  • 3 tbsp chopped chives
  • 2 eggs, beaten
  • 1 cup buttermilk
  • 2 tbsp olive oil
  • olive oil spray
  • good quality butter
