Pina Colada pineapple

Method

  • Grill or panfry the pineapple, adding a little icing sugar towards the end.
  • To serve, place the pineapple on individual plates, mound a scoop of ice cream on top and sprinkle with a little Malibu. Then top with the passionfruit and a garnish of mint sprinkled with a little icing sugar.

  • pulp of 2 passionfruit
  • fresh mint sprigs
