Rainbow trout cooked in the sand


  • Whisk up the garlic, ginger, coriander, oil, honey, soy, sambel, turmeric, cumin and lime juice.
  • Lay 2 large sheets of kitchen foil on top of each other on a workbench. Place the fish in the centre and cut a few slashes in each side of the fish.
  • Pour the marinade over the fish, rubbing it into the slits, and wrap up tightly. Then wrap the parcel in a large towel and go to Lake Tarawera in New Zealand. Dig a hole in the sand, cover it over and leave for about an hour.
  • nb. If you don't happen to have some boiling sand nearby, cook the fish in the oven or on the BBQ (not wrapped in the towel).

  • a good slurp of honey
  • a splash of soy sauce
  • 1 tspn sambel oelek (or another chilli paste)
  • ½ tspn turmeric
  • ½ tspn ground cumin
  • juice of 3 limes
  • 1 large whole rainbow trout (or salmon)
