A steak & smothered onion sandwich

Method

  • Heat the oil in a large heavy-bottomed pan and gently cook the onions until golden and tender.  Then add the garlic, tomato sauce, sugar, sambel, mustard, vinegar, Worcestershire and seasonings. Mix well and cook for about 10 mins, stirring now and again.
  • At the same time, lightly spray the steaks all over with oil and cook to the desired degree on a preheated BBQ or ridged grill. Remove, allow to rest and then slice.
  • Lightly spray the bread with oil and grill.
  • To serve, spoon a layer of the onion on the base of half the grilled bread. Then top with the lettuce, a steak and the remaining bread.

  • 1 tbsp olive oil
  • 2 large onions, finely sliced
  • 1 garlic clove, crushed
  • 150 ml tomato sauce
  • ½ tbsp brown sugar
  • ½ tbsp sambel oelek (or any chilli paste)
  • ½ tbsp Dijon mustard
  • 1 tbsp white vinegar
  • 1 tbsp Worcestershire sauce
  • sea salt & freshly ground pepper
  • 2 x 200 gm steaks, trimmed of all fat & sinew
  • olive oil spray
  • 1 baguette, cut in 4 crossways & halved lengthways
  • shredded lettuce
