Smoked mackerel fritters with avocado salsa

Method

  • Gently combine the onion and avocado with 2 tbsp chopped coriander, the juice of 2 limes, grated rind of 1 lime, the olive oil, seasonings and cayenne. mashing as you do so. Set aside.
  • In another bowl, whisk the flour with the soda water, eggs and about 1 tspn salt until smooth. Then add the zest of 1 lime with ¼ cup chopped coriander and the flaked fish. Mix well, being careful not to break up the fish.
  • Heat a thin layer of vegie oil in a large pan and cook spoonfuls of the mixture until golden all over. Then drain well on kitchen paper towels.
  • Arrange the fritters on individual plates and serve with a dollop of the salsa in the centre.

  • a splash of olive oil
  • sea salt & freshly ground pepper
  • a pinch of cayenne
  • 1½ cups self-raising flour
  • ½ cup soda water
  • 2 eggs
  • 1½ cups flaked smoked mackerel
  • vegetable oil
