Christmas cake muffins

Method

  • Preheat oven to 140°C.
  • Beat the sugar, butter, coconut, milk and eggs in a large bowl until well combined. Add the flours with the dried fruit and mix well.
  • Spoon the mixture into lightly oiled muffin trays.
  • Then cook in the top shelf of the oven for about 25 mins.

Ingredients

  • ½ cup sugar
  • 150 gm unsalted butter, softened
  • ¾ cup desiccated coconut
  • ½ cup milk
  • 2 eggs, lightly beaten
  • ½ cup plain flour, sifted
  • ½ cup self-raising flour, sifted
  • 1 cup chopped dried pineapple
  • 1 cup chopped dried apricots
  • ¾ cup sultanas
  • ½ cup craisins (or dried cranberries)
  • cooking oil spray
