Noodle pancakes


  • Place the noodles in a large bowl. Pour boiling water over and set aside until separated. Then drain well.
  • At the same time, heat the sesame oil in a large pan and gently saute the onion, chillies and garlic until just tender.
  • Place the spring onions, coriander, eggs, a good slurp of Asian chilli sauce and seasonings in a large bowl. Add the onion mixture with the noodles and mix well.
  • Then heat a little vegetable oil in a large non-stick pan and cook thin pancakes, in batches, until golden brown on both sides. 
  • Serve sprinkled with more chilli sauce.


  • 1 packet udon noodles
  • 1 tbsp sesame oil
  • ½ large red onion, finely chopped
  • 2 small red chillies, seeded & sliced
  • 2 garlic cloves, crushed
  • 4 spring (green) onions, finely chopped
  • 3 tbsp chopped coriander
  • 3-4 eggs
  • Asian chilli sauce
  • sea salt & freshly ground pepper
  • vegetable oil
