Asparagus frittata


  • Preheat oven to 180°C.
  • Heat the oil and butter in a large pan (that can go into the oven) and gently saute the asparagus until reasonably tender.
  • Beat the eggs and seasonings in a large bowl, before adding the feta and chives. Mix well, pour over the asparagus and cook until it begins to set around the edges, but is wobbly in the centre. 
  • Then cook the frittata in the oven for 8-10 mins until just set. 
  • Serve warm with a salad on the side.


  • 1 tbsp olive oil

  • 16 asparagus stalks, cut into pieces
  • 8 free range eggs
  • sea salt & freshly ground pepper
  • 125 gm feta cheese, crumbled
  • 1 tbsp snipped chives
