Indian onion fritters

Method

  • Whisk the flour, egg and salt in a large bowl with enough water to form a smooth batter, little by little. (It will coat your finger when ready.) Set aside for 20 mins.
  • Then add the onions, coriander and garam masala to the dough. Mix well and set aside for another 10 mins.
  • When ready, heat a thin layer of oil in a large non-stick pan and fry spoonfuls of the batter, pressing down lightly as you do so, until golden on both sides. Drain well on kitchen paper towels. 
  • Serve with your favourite Indian chutney or relish on the side.

  • 225 gm gram (besen or chickpea) flour
  • 1 egg
  • a good pinch of sea salt flakes
  • 500 gm onions, sliced (not too thin)
  • 2 tbsp chopped coriander
  • 1 tspn garam masala
  • vegetable oil
  • Indian chutney or relish
