Sweet chilli chicken salad


  • Cook the seasoned chicken on a lightly oiled ridged grill (or BBQ) until tender. Then cut into chunks.
  • To make the dressing, whisk the garlic, ginger and sweet chilli sauce with the vegie oil, fish sauce and lime juice. Taste for seasoning and set aside.
  • Then toss the spring onions, cashews, beanshoots, tomatoes, rocket, coriander and chicken in a large bowl with the dressing to taste.

  • 2-3 skinless chicken breasts, cut into strips
  • sea salt & freshly ground pepper
  • 1 garlic clove, crushed
  • 1 tspn grated fresh ginger
  • 3 tbsp sweet chilli sauce
  • 3 tbsp vegetable oil
  • 2 tspn Asian fish sauce
  • 2 tbsp fresh lime juice
  • 6 spring (green) onions, cut into lengths
  • 1-2 tbsp cashews, toasted
  • 1 handful beanshoots
  • 6 cherry tomatoes, quartered
  • 1 bunch wild rocket (or watercress)
  • 2 tbsp fresh coriander leaves
