Sago pudding


  • Preheat oven to 170°C fan forced (190°C normal).
  • Place the golden syrup, sago, milk and cream in a heavy-bottomed pot and bring to the boil. Turn the heat down and simmer for 10 mins, regularly stirring. Then allow to cool.
  • When cool, add the eggs, vanilla, lemon zest and juice to the mixture. Mix well, transfer to an ovenproof dish and cook in the oven for 1 hour.
  • Serve hot or warm.

  • 400 ml milk
  • 350 ml thickened cream
  • 2 eggs
  • 1 tspn vanilla essence
  • 1 tspn grated lemon rind
  • 2 tspn fresh lemon juice
