Stuffed pasta with pumpkin, parmesan & brown butter

Method

  • Preheat oven to 180°C.
  • Toss the pumpkin in oil and seasonings in a heavy-bottomed oven tray. Then roast until tender.
  • When the pumpkin is almost ready, cook the pasta as per directions on the packet.
  • Then gently cook the butter in a large heavy-bottomed pan until brown. Then add the pumpkin, seasonings and drained pasta. Toss well.
  • To serve, spoon the pasta into individual large bowls and top with plenty of parmesan.

  • ½ butternut pumpkin, cubed
  • olive oil 
  • sea salt & freshly ground pepper
  • 400 gm stuffed tortellini
  • a good knob of butter
  • freshly grated parmesan
