Cornflake cookies


  • Preheat oven to 175°C.
  • Cream sugar and butter using a hand processor. Then add the eggs, one at a time, continually mixing, before adding the flour, salt and allspice. Gently fold, using a wooden spoon, until well combined.
  • Then add the almonds and sultanas to the dough and mix well. 
  • Form the mixture into balls and roll into the Cornflakes.
  • Then place the dough balls on lightly oiled baking trays, leaving plenty of space between each one, and cook in the oven for about 15-20 mins until golden.


  • 250 gm raw sugar
  • 250 gm unsalted butter, softened
  • 2 eggs
  • 2 cups self-raising flour, sifted
  • a good pinch of salt
  • ½ tspn ground allspice
  • ½ cup slivered almonds
  • ½ cup sultanas
  • 1 packet Cornflakes
