Banana & passionfruit crepes


  • Whisk the milk with the salt, a pinch of sugar and the eggs until well combined in a large bowl. Then add the flour, little by little, continually whisking until the mixture resembles thickened cream. Set aside.
  • Gently heat 2 tbsp butter with 4 tbsp sugar in a pan until lightly caramelised. Then add the bananas, passionfruit, orange juice and Grand Marnier. Toss well and gently cook.
  • At the same time, melt the remaining butter in a crepe pan (or small non-stick pan). Then pour it into the batter mixture and whisk up.
  • Cook the crepes, individually, and place on plates.
  • Place a spoonful of the fruit mixture on top of each crepe, fold over and serve with a dollop of cream or ice cream on the side.

  • pulp of 3 passionfruit
  • juice of 2 oranges
