A rich pumpkin, potato & cheese gratin

Method

  • Preheat oven to 180°C.
  • Brush a large ovenproof dish with melted butter and layer with the potatoes, seasonings, both cheeses and a little cream. Then repeat the process using pumpkin this time.
  • Loosely cover  the dish with kitchen foil and cook in the oven for about 45 mins. Then remove the foil and cook for about another 10-15 mins until golden and bubbling.
  • Serve alongside your favourite meat dish.

  • a good knob of butter, melted
  • 4-6 potatoes, peeled & very finely sliced
  • sea salt & freshly ground pepper
  • grated tasty cheese
  • grated parmesan
  • thickened cream
  • 1-2 butternut pumpkins, peeled & very finely sliced
