Nude burgers with blue cheese sauce


  • Cook the burger patties in the oven or on a lightly oiled grill.
  • To make the sauce, combine the blue cheese, crème fraiche, mustard, Worcestershire, sambel, lemon juice and ground pepper in a processor. Taste for seasoning.
  • To serve, arrange the tomato, cucumber and lettuce on individual plates. Then top with the burgers and a good dollop of the sauce.


  • 4 burger patties
  • 1 cup soft blue cheese, rind removed
  • 4 tbsp crème fraiche
  • 2 heaped tspn grain mustard
  • 1 tspn Worcestershire sauce
  • ½ tspn sambel oelek (or any chilli paste)
  • a squeeze of lemon juice
  • freshly ground pepper
  • sliced tomato
  • sliced telegraph (continental) cucumber
  • inner leaves of 1 cos lettuce
