Veal cutlets with charred radicchio


  • Mix together the chillies, garlic, ¼ cup oil and the lemon juice in a large bowl. Add the cutlets and toss well.
  • Then generously spray the radicchio with oil, season and cook on a preheated ridged grill (or BBQ) with the veal, brushing with the marinade as you do so.
  • To serve, arrange the radicchio and veal on individual plates and sprinkle a little balsamic and extra virgin olive oil on top.


  • 1-2 small red chillies, seeded & sliced

  • 4-8 veal cutlets, trimmed of all fat & sinew
  • olive oil spray
  • 2-4 heads of radicchio, cleaned, trimmed & halved lengthways 
  • freshly ground salt & pepper
  • balsamic vinegar
  • extra virgin olive oil
