Asian pork fillets with BBQ bok choy

Method

  • Whisk the marinade with the ginger, garlic and juice of 1 lime in a large bowl. Add the pork, toss well and set aside for about 15 mins.
  • When ready, cook the pork on a lightly oiled ridged grill (or BBQ).
  • Spray the bok choy halves all over with oil and also grill.
  • Then lay the bok choy on individual plates and top with the pork. Sprinkle a little extra honey & soy marinade over the top, garnish with coriander sprigs and serve with lime wedges on the side.

  • 1/3rd cup honey & soy marinade
  • a knob of ginger, grated
  • 1 garlic clove, crushed
  • 3 limes
  • 3 pork fillets, trimmed of all fat & sliced thickly on the diagonal 
  • olive oil spray
  • 4 bok choy, cleaned well & halved lengthways
  • fresh coriander sprigs
