Auntie Ruth's Muesli


  • Preheat oven to 165°C.
  • Place the honey, apple juice concentrate and apricot oil in a small heavy-bottomed pot and gently heat.
  • At the same time, combine the rolled oats, pumpkin seeds, coconut, almonds, bran, sesame seeds and linseeds in a large bowl. Add the melted honey mixture and stir until well combined. Then pour into a baking dish, evenly spread out and cook in the oven for about 10 mins until it starts to change colour, regularly stirring.
  • Then add the fruit medley, mix well and set aside to cool, stirring now and again.
  • Serve with fruit, milk or your favourite yoghurt.
  • nb. It will keep in an airtight container for 3-4 weeks (if it lasts that long).

  • ½ cup slivered almonds

  • ½ cup sesame seeds
  • ½ cup linseeds
  • 1 cup dried fruit medley
