Seafood mixed grill with lemon & tomato oil


  • Heat a ridged grill (or BBQ) and lightly spray with oil. Then cook the seafood (starting with that which takes the most time to cook), spraying with more oil and squeezing lemon juice over the top as you do so.
  • Place the olive oil and the juice of ½ lemon with seasonings, tomatoes and 1 tspn thyme leaves in a heavy-bottomed pot. Warm over a low heat.
  • To serve, arrange the seafood on a large platter (or individual plates), spoon the warm oil over the top and garnish with thyme sprigs.
