Pizza chook


  • Preheat oven to 200°C.
  • Cover the chicken breasts with doubled-over plastic wrap and batten out to an even thickness.
  • Then panfry the lightly floured chicken in hot oil (in a pan that can go into the oven) until well coloured, seasoning once sealed. 
  • Combine the anchovies, olives, tomatoes and basil.
  • Then lay a piece of prosciutto on each chicken breast, mound the olive mixture on top and sprinkle with cheese. Cook in the oven for about 10 mins until the cheese is bubbling and the chicken is cooked through.


  • 4 skinless chicken breasts

  • 3 anchovies, chopped
  • 6 pitted black olives, sliced
  • 6 cherry tomatoes, quartered
  • 8 basil leaves, sliced
  • 4 slices prosciutto
  • grated tasty cheese
