Oysters Kilpatrick

Method

  • Preheat overhead grill to the highest degree.
  • Heat the oil in a non-stick pan and gently saute the bacon and drain well.
  • Return a little of the bacon oil to the pan and gently saute the onion until soft.
  • Then combine the bacon and onion with the Worcestershire and Tabasco.
  • Place a rack on a large oven tray and lay the oysters in their shells on top. Spoon a dollop of the mixture on each one and grill until golden brown.
  • Arrange the oysters on individual plates and enjoy! 

Ingredients

  • 1-2 tbsp olive oil
  • 200 gm bacon, finely diced
  • 100 gm finely chopped onion
  • 100 ml Worcestershire sauce
  • 2 drops Tabasco
  • 3 dozen oysters, freshly shucked
