Spicy duck salad

Method

  • To make the dressing, whisk the small chillies and garlic with the lime juice, sugar, fish sauce and rice vinegar.
  • Then toss the remaining ingredients in a large bowl with dressing to taste.

Ingredients

  • 2 small red chillies, seeded & finely sliced
  • 2 small garlic cloves, crushed
  • 4 tbsp fresh lime juice
  • 2 tbsp brown sugar
  • 4 tbsp Asian fish sauce
  • 4 tbsp rice wine vinegar
  • 2 long red chillies, seeded & finely sliced
  • 1 punnet cherry tomatoes, halved
  • ½ red onion, finely sliced
  • ½ handful bean shoots
  • 1 cup mint leaves
  • 1 cup coriander leaves
  • ½ large bought Chinese BBQ duck, shredded
