Roasted blue eye with Greek potatoes


  • Preheat oven to 200°C.
  • Place the potatoes in a gratin dish (or casserole) in one layer. Add the garlic, onions, seasonings and thyme with just enough stock to moisten. Toss well and cook in the oven for about 45 mins until the potatoes are very tender, stirring now and again. Then toss with a little lemon juice.
  • When the potatoes are almost ready, place the fish on a lightly oiled baking sheet. Sprinkle with a little more oil, pepper and the juice of ½ lemon. Then cook in the oven for about 6-8 mins.
  • To serve, mound the potatoes on individual plates and top with the fish.

  • 2 tbsp thyme leaves
  • fish, vegie or chicken stock

  • 4 x 180 gm thick fish steaks
