Gajar Halwa


  • Soak the carrots in the milk and water in a large bowl for a few minutes. Then transfer the lot to a wok (or large heavy-bottomed pan). Bring to the boil and cook until the liquid is reduced, adding more water if needed. Add the cardamom and ghee and gently cook, continually stirring.
  • When almost ready, add the sugar and mix well to combine. 
  • Spoon into individual bowls, garnish with pistachios and almonds and serve hot.
