Pear & goat's cheese tart


  • Preheat oven to 200°C.
  • Place the pears in a bowl, toss with the lemon juice and set aside for a few minutes.
  • Then place the pastry on a baking tray and lightly score a border around the edges. Sprinkle cheese over the base, leaving a border, layer the pears on top and generously sprinkle with the sugar.
  • Beat the egg with the milk and brush around the pastry edges. Then cook the tart in the top shelf of the oven for about 12-15 mins until the pastry is golden. Drizzle with golden syrup and serve with cream or ice cream on the side.


  • 3-4 ripe pears, peeled & cut into wedges
  • 1 tbsp lemon juice
  • 1 sheet bought puff pastry 
  • soft goat's cheese, mashed a little
  • caster sugar
  • 1 egg
  • ¼ cup milk
  • melted golden syrup
