Sweet 'n' spicy pork

Method

  • Heat a little oil in a large heavy-bottomed pan and gently saute the capsicum, onion, chillies and garlic until softish.
  • Add the pork and toss until sealed.
  • Then add the spices, tomatoes, stock, herbs and honey. Mix well, turn the heat down and simmer until the meat is tender. Taste the sauce for seasoning.
  • To serve, mound steamed rice on individual plates and spoon the pork with plenty of sauce on top.

  • 1 yellow capsicum, cored, seeded & finely sliced
  • 1 red onion, chopped
  • 2-3 small red chillies, finely chopped
  • 2 garlic cloves, crushed
  • 350 gm pork fillet, trimmed of all fat & sinew, sliced
  • a pinch each of ground cumin, coriander & cinnamon
  • 1 can diced tomatoes
  • 1 cup chicken stock
  • 2-3 tbsp each chopped fresh parsley & mint
  • 1 tbsp honey
