Braised baby potatoes with garlic


  • Put all the ingredients in a heavy-bottomed pan over a high heat. Toss to get started and then turn the heat down to the lowest heat.
  • Cover and gently simmer for about 35-40 mins until tender, turning every now and again.
  • Serve as an accompaniment to your favourite simple meat or fish dish.


  • ¼ cup olive oil
  • 1 kg baby potatoes (chats), scrubbed but not peeled
  • 12 small pickling onions
  • 12 garlic cloves, smashed a little
  • 3 bay leaves
  • a few fresh thyme sprigs
  • sea salt & freshly ground pepper
  • 10 large spring (green) onions, cut into 3
