Baked fish with lemons, tomatoes & olives


  • Preheat oven to 180°C. 
  • Lightly oil 4 square pieces of kitchen foil and top with the fish, lemon segments, tomatoes and olives. Spray with a little more oil, wrap up (leaving space above the fish) and cook in the oven for 6-10 mins, depending on thickness of the fish.
  • Serve with a simple green salad on the side.

  • ½ punnet cherry tomatoes, quartered
  • 8-12 pitted black olives, sliced
