Curried potatoes with baked eggs & HP sauce


  • Preheat oven to 200°C.
  • Coarsely grate the potatoes and drain well. Then place on a clean tea towel, wrap up and squeeze out any excess liquid.
  • Place the grated potato in a large bowl and combine with the spring onions, curry powder and seasonings.
  • Heat a thin layer of oil in a large heavy-bottomed pan (or serving dish that can go in the oven). Add the potato mixture in one layer and spread out. Then cook in the oven for about 10-15 mins until golden brown on the base.
  • When ready, make 4 indents in the top and carefully drop in the eggs, individually. Return to the oven and cook until the eggs are just set.
  • Sprinkle HP sauce on top and serve with plenty of crusty bread.

  • 2-3 spring (green) onions, finely chopped
