Mini chocolate orange muffins


  • Preheat oven to 180°-190°C.
  • Sift together the flour and cocoa into a large bowl.
  • In another bowl, cream the sugar and butter using a hand mixer. 
  • Add the eggs, little by little, to the sugar mixture with 1 tbsp of the flour mixture at a time, continually beating with the hand mixer. Then add the chocolate and orange zest. Mix with a wooden spoon until well combined.
  • Lightly spray two mini muffin tins and fill each cavity two-thirds full. Then cook in the oven for 10-12 mins until risen and slightly firm to the touch.


  • 1 cup self-raising flour
  • 2 tbsp cocoa
  • 100 gm caster sugar
  • 125 gm unsalted butter, softened
  • 2 eggs, lightly beaten
  • 60 gm chocolate buttons
  • grated rind of 1 orange
  • cooking oil spray
