Brown bread

Method

  • Combine the yeast and 150 ml warm water. Set aside for about 15 mins until it begins to foam.
  • Then mix together the flours and salt in a large bowl. Make a well in the centre and pour in the yeast mixture. Using your hands, mix to a dough adding warm water, little by little, as needed. Then knead with the palm of your hand for about 10 mins until smooth and it springs back when you press with your finger. Add a little extra flour if needed.
  • Put the dough in a large bowl, cover with plastic wrap and set aside in a warm spot until doubled in size. Then knock it back, put in a lightly oiled bread tin and set aside until doubled in size once again.
  • Preheat oven to 220°C.
  • Brush the top of the loaf with milk, sprinkle with sunflower seeds, pine nuts and salt flakes. Then cook in the oven for about 20-25 mins (checking if ready by tapping the bottom of the loaf with your knuckle).
  • Allow to cool on a cake rack, slice and serve with the best butter.

  • 200 gm strong (baker's) wholemeal flour
  • 1 tbsp sea salt flakes
  • olive oil spray
  • milk
  • a few sunflower seeds
  • a few pine nuts
