Barbecued cherry tomato baguette with feta & rocket


  • Preheat oven to 220°C.
  • Put the tomatoes on small metal skewers, spray with oil, season and cook on a preheated ridged grill or BBQ.
  • At the same time, cut the baguette into pieces the same length as the skewers. Then heat the bread in the oven (or wrap in kitchen foil and heat on the grill). When ready, cut the bread in half lengthways, almost through to the bottom.
  • To serve, place the rocket in the middle of the bread and top with a skewer, feta and a little sprinkling of oil and balsamic.


  • 1-2 punnets large cherry tomatoes
  • olive oil spray
  • sea salt & freshly ground pepper
  • 1 baguette
  • rocket leaves
  • feta cheese, crumbled
  • balsamic vinegar
