Tuna, sweet potato & cheese pasties

Method

  • Preheat oven to 190°-200°C.
  • Gently mix the tuna with both cheeses, the parsley, tapenade, salt and mashed sweet potato using a wooden spoon. Taste for seasoning.
  • In a smaller bowl, beat the egg and milk to make an egg wash. 
  • Then cut the pastry sheets into rounds, brush the edges with egg wash and spoon some of the mixture into the centre. Fold over the pastry, press the edges down with fork prongs and place on a baking tray. Brush the tops with more egg wash and cook in the oven for about 8-10 mins until golden and risen.
  • Serve with a simple green salad on the side.

  • 185 gm can of tuna in oil, drained reasonably well & flaked
  • 100 gm feta, crumbled
  • 100 gm grated tasty cheese
  • 2 tbsp chopped parsley
  • 1 tspn sundried tomato tapenade
  • a pinch of salt flakes
  • 1 medium-large sweet potato, boiled & mashed
  • 1 egg
  • ¼ cup milk
  • 4 puff pastry sheets
