Smoked chicken & noodle salad

Method

  • Soak the shiitakes in hot water for about 30 mins. Then discard the stalks and slice the caps.
  • When ready, place the noodles in a bowl, pour boiling water over and soak, gently separating with tongs as you do so.
  • Heat the oil in a wok (or large non-stick pan) and saute the ginger and onion until tender. Then add the shiitakes, bok choy, wonga bok, snowpeas, spring onions, oyster sauce, soy, stock and chicken. Toss well and cook for a few minutes, before adding the drained noodles. Mix again, cover and briefly cook. Then toss in the coriander and taste for seasoning.

  • 8-10 shiitake mushrooms
  • 1 packet udon noodles (or any other variety)
  • 1 tbsp vegetable oil
  • 1 heaped tspn grated fresh ginger
  • ½ red onion, chopped
  • leaves of 2 baby bok choy, sliced
  • ¼ wonga bok, sliced
  • 8 snowpeas, topped & tailed
  • 4 spring (green) onions, sliced
  • a splash of oyster sauce
  • a splash of soy sauce
  • 1 cup chicken stock
  • 2 smoked chicken breasts, sliced
  • 2 tbsp freshly chopped coriander
