Egg, ham & spinach 'pie'

Method

  • Preheat oven to 180°C.
  • Put the spinach in a colander and pour boiling water over the top. Then toss and drain well.
  • Place the ham in a large ovenproof dish and top with the spinach. Then break eggs on top, season and sprinkle with a little cream, parsley and parmesan. Cook in oven for about 10 mins until the eggs are just set.
  • Serve with plenty of crusty bread and a simple green salad on the side.

  • 2 good handfuls baby spinach leaves, washed well
  • 6 thin slices leg ham
  • 4 eggs
  • sea salt & freshly ground pepper
  • 3-4 tbsp cream
  • 1-2 tbsp freshly chopped parsley
  • freshly grated parmesan
