Grilled spiced minced seafood on lemongrass stalks

Method

  • Heat a little oil in a wok (or large heavy-bottomed pan) and gently saute the turmeric, galangal and candlenut with 2 sliced chillies, the garlic and 2 sliced shallots until just tender. Then grind with a mortar and pestle (or blend in a food processor) until a paste is formed.
  • When ready, mix together the tuna, prawns, 3 tbsp coconut and about 2 tbsp of the spice paste to taste using your hands.
  • Add the chopped lime leaves with the lime juice and seasonings. Mix well and then form 'sausages' on the top of each lemongrass stalk with the mixture and cook on a lightly oiled ridged grill (or BBQ).
  • To make the coconut rice, heat a little fresh oil in the wok and gently saute the remaining coconut, chillies and basil with 1 tspn finely chopped lemongrass, spice paste to taste, the rice and seasonings. Mix well and cook to heat through.
  • To serve, mound the rice in the centre of individual plates and arrange the lemongrass sticks on top with a sprinkling of fried shallots.

  • 1 cm piece fresh turmeric, finely sliced
  • 1 cm piece fresh galangal (or ginger), finely sliced
  • 1 candlenut, finely sliced
  • 3 small red chillies, seeded & finely sliced
  • 1 garlic clove, finely sliced
  • 4 shallots, finely sliced
  • vegetable oil
  • 250 gm fresh tuna, finely chopped
  • 8-10 small prawns, peeled, cleaned, deveined & finely chopped
  • 6 tbsp freshly grated coconut
  • ½ tspn finely chopped kaffir lime leaves
  • juice of ½ kaffir lime (or ordinary lime)
  • sea salt & freshly ground pepper
  • lemongrass stalks
  • 3-4 fresh basil leaves, finely chopped
  • 2 cups cooked rice, refrigerated overnight
