Braised snapper with orange, soy & coriander


  • Heat a lightly oiled non-stick pan and sear the fish on both sides. 
  • Add the orange zest with the juice of about 2 oranges and the soy to the pan and gently cook, adding more orange juice as needed.
  • While the fish is cooking, briefly blanch the snowpea shoots and drain well.
  • Mound the snowpea shoots on individual plates and top with the fish.
  • Add the remaining orange juice to the pan with the coriander. Mix well and cook to form a glaze. Then pour the sauce over the fish and serve with steamed rice.


  • olive oil spray
  • 4 x 180 gm snapper fillets (or any delicate fish)
  • grated rind of 2 oranges
  • juice of 3 oranges
  • a few good splashes of soy sauce
  • 1 small packet snowpea shoots
  • 2 tbsp freshly chopped coriander
