Pear & parsnip soup

Method

  • Place the parsnips, pears and 3-4 cups stock to just cover in a large heavy-bottomed pot. Season, cover, bring to the boil and boil for 20-30 mins until the parsnips are tender.
  • Then blend the parsnips and pears, and return to the pot with another 3 cups stock. Whisk up, taste for seasoning and simmer for about 15 mins.
  • Serve with a dollop of pesto and parmesan shavings sprinkled on top.

  • 5-6 medium parsnips, peeled & chopped
  • 4 ripe pears, peeled, cored & chopped
  • 6-7 cups vegetable stock
  • sea salt & freshly ground pepper
  • pesto
  • parmesan shavings
