Chorizo & vegie stew with baked eggs


  • Preheat oven to the highest degree with a baking dish containing the oil inside.
  • Then carefully place the capsicum, chorizo, tomatoes, garlic and seasonings in the dish. Toss and cook in the oven until the tomatoes soften.
  • Form 4 wells in the mixture and carefully break in the eggs, leaving space between each one.
  • Return the dish to the oven and cook until the eggs are set. 
  • Serve with a sprinkling of parsley on top and plenty of crusty bread alongside.


  • 1 tbsp olive oil
  • 2 red capsicum, seeded, ribs removed & finely sliced
  • 1-2 chorizo sausages, sliced
  • 4 large ripe tomatoes, cored & cut into wedges
  • 2 garlic cloves, finely sliced
  • sea salt & freshly ground pepper
  • 4 eggs
  • chopped fresh parsley
